Meat Loaf

Description: This is another version of Gram's Meat Loaf that is fondly remembered.

Ingredients:
1 Pound hamburger
1 Egg
1 Cup combination cracker crumbs and torn bread pieces
3 Tablespoons onion, finely chopped or minced
1 Tablespoon green pepper, chopped
1/2 Teaspoon salt
1/2 Teaspoon pepper
Ketchup or tomato sauce to cover top
2 Carrots, quartered
4 Small - medium Potatoes, quartered
In lieu of chopped onions an envelope of onion soup mix can be substituted. If you do this, omit added salt.

Baking dish
Directions:
Preheat oven 350 degrees
Mix hamburger, egg, bread crumbs, onion, bell pepper, salt and pepper together in a mixing bowl.
Shape into a loaf and place in a baking dish.
Cover the top of the meatloaf with ketchup or tomato sauce.
Place carrots and potatoes around the sides of the meatloaf. Add 1/2" water around the edges of the baking dish.
Bake at 350 degrees for 45-50 minutes. Occasionally check potatoes and carrots, turning and/or basting with water as needed to prevent burning.
