Pumpkin Cranberry Bread

Description: When you make this you know Fall is in the air and sweltering summer days are behind. Great to have around for Thanksgiving. Be sure to have a nice cup of tea nearby.

Ingredients:
Flour Mixture
3 cups Flour
1 Tablespoon + 2 Teaspoons pumpkin pie spice
2 Teaspoons baking soda
1 1/2 Teaspoon salt
Pumpkin Mixture
3 cups Sugar
1 (15oz) can Pumpkin
4 Eggs
1 cup Vegetable oil
1/2 cup Orange juice
1/2 cup Pecans or walnuts, I tend to be gracious with my 1/2 cup
1 cup Dried cranberries
Special tools/utensils needed:
2 Mixing bowls, spatula, spoon, 2-9" X 5" loaf pans, greased and floured, aluminum foil
Directions:
Preheat the oven to 350 degrees.
Mix flour mixture together.
Mix pumpkin mixture together.
Add pumpkin mixture to flour mixture.
Fold in pecans and/or walnuts.
Spoon mixture into 2 loaf pans.
Bake for 60 - 65 minutes until a toothpick comes out clean.
Cool in pans for 10 minutes. Remove and cool completely on racks.
Store in foil. Can be frozen also.
