Garlic Chicken

Ingredients:
4 chicken breasts, boneless, skinless
1 Tablespoon each Salt, pepper, paprika in equal parts for the rub
garlic, whole head
5 Tablespoons Olive Oil
2 Tablespoons Brandy
3 1/2 ounces Dry Sherry (Montilla, for example)
1 bay leaf
Directions:
Rub chicken breasts with salt, pepper, and paprika. Set aside for 15 minutes.
Peel the garlic head and chop coarsely.
Heat the oil in a large frying pan over a medium-high heat.
Add the garlic & saute until golden & crisp. Take care not to burn. Skim garlic out & reserve.
In the same pan, add the chicken breasts & brown on both sides.
Remove the pan from the heat, add the brandy, sherry, bay leaf, and ½ of the garlic from step 4.
Cover, return to reduced heat and simmer until the chicken is tender, about 25 minutes.
When serving, top with the remaining sautéed garlic.
