Broccoli Egg Puff

Description: Like quiche without the crust

Ingredients:
1 pound Broccoli
2 tablespoons All-purpose flour
1/2 teaspoon Baking powder
5 Eggs, beaten
1 cup Cottage cheese, cream-style
4 slices Bacon, crisp-cooked, drained and crumbled
1/2 cup shredded Cheddar or swiss cheese (2 oz)
Special tools/utensils needed:
Knife, cutting board, saucepan with lid, small mixing bowl, medium mixing bowl, wire whisk or rotary
beater, spatula, greased 10 inch by 6 inch by 2 inch baking dish
Directions:
Cut off broccoli buds; set aside.
Chop remaining stalk; cook, covered in a small amount of boiling water salted for 5 minutes.
Add reserved buds; cook 5 minutes. Drain. Set aside.
In a small mixing bowl stir together flour and baking powder; set aside.
In a medium mixing bowl beat eggs.
With a wire whisk or rotary beater, beat in flour mixture.
Stir in cottage cheese and bacon.
Evenly spread broccoli in the bottom of a greased 10X6X2- inch baking dish.
Pour egg mixture evenly over broccoli.
Bake, uncovered, in a 350 oven for 20 minutes.
Sprinkle with cheddar or Swiss cheese.
Bake 3 minutes more or till center is almost set and cheese is melted.
Let stand 5 minutes before serving.
