Beef Stroganoff

Ingredients:
1 1/2 Pounds beef filet, cut into narrow strips (Hamburger may be substituted)
3 Tablespoons butter, divided
1 Medium onion, sliced
1 Tablespoon flour
1 Cup beef broth or canned consommé'
1 Teaspoon prepared mustard
3 Tablespoons sour cream
1 (4 oz) Can of mushrooms, drained (fresh can be substituted)
Special tools/utensils needed: None
Directions:
Cut the beef into narrow strips, julienne style. (Hamburger may be substituted in place of beef.) Heat 1 1/2 tablespoons of butter in a pan; add beef and onions. Brown. Set aside, keeping warm.
Melt butter in a saucepan, add flour and stir with a wire whisk until blended. Meanwhile, in a separate pan bring consommé to a boil. Add all at once to the butter-flour mixture, stirring vigorously, until the sauce is thickened and smooth. Stir in the mustard.
Add sour cream and mushrooms to the mustard mixture. Heat quickly, just until sour cream and mushrooms are warmed, approximately 3 minutes.
Pour sauce over beef and serve.
