Potato Cakes

Description: This is another favorite Gram made. It was typically prepared with leftover mashed potatoes and was served as part of a breakfast meal. This could be a nice morning breakfast, brunch or an evening meal breakfast. There was no recipe so the 3 sisters have recreated to the best of our ability.

Ingredients:

 2 Cups mashed potatoes

1/2 Teaspoon garlic powder

1/2 Cup grated cheese 

2-3 Tablespoons flour

Olive oil

Special tools/utensils needed:

 Skillet 

Directions: 

1. Mix all ingredients together, starting with a smaller amount of flour. Use enough flour to form a firm patty.

2. Form 4 patties.

3. Pour enough olive oil to cover the bottom of a skillet on medium heat. Sauté until golden brown. Flip and brown the second side.
