Sea Salt Peanut Butter Cookies

Description: Unlike other salted peanut butter cookies that have a dusting of sea salt on top of the baked cookie, this recipe combines the sea salt in the batter. This provides for the occasional, and thus sublime, perfect bite when the salt explodes in a symphony of goodness in your mouth.

Servings: Approximately 3 dozen depending on the size of cookie one makes.

Ingredients:
1-1/4 cups All-purpose flour
1 teaspoon Sea salt
1 teaspoon Baking powder
1/2 cup Butter, room temperature
3/4 cup Crunchy peanut butter
1/2 cup Sugar, plus extra for sprinkling
1/2 cup Brown sugar, packed
1/2 teaspoon Vanilla extract
1 Egg
Special tools/utensils needed:
Hand mixer or stand mixer
Directions:
Preheat the oven to 375 degrees.
In a medium mixing bowl, sift together flour, salt and baking powder; set aside.
In a separate bowl, cream the butter, peanut butter and sugars together until smooth. Add the vanilla and egg into the cream mixture, and beat until fully incorporated.
Stir flour mixture into the cream mixture, blending well.
Shape mixture into 3/4-inch balls on a greased cookie sheet.
Flatten each cookie in a cross pattern with the tines of a wet fork, dipping the fork periodically in flour or water to keep it from sticking to the cookie dough. Dust the top of the cookies with white sugar.
Bake for 10 to 12 minutes. Cool on a wire rack.
