Baked Chicken Breast

Description: A hearty baked chicken breast. Good served with Uncle Ben's Wild Rice Mix.

Ingredients:
8 (6 ounce) Boneless chicken breasts
8 (2 ounce) Slices canadian bacon
1 (10 ounce) Can of cream of mushroom soup
1 (8 ounce) Carton sour cream
1 (4.5 ounce) Packet of Shake & Bake or 1 cup seasoned breadcrumbs
Salt & Pepper to taste
Special tools/utensils:
Foil
Meat thermometer
Instructions:
Preheat oven to 275 F
Mix sour cream & cream of mushroom soup in a small bowl
Pat chicken breasts dry with a paper towel, salt & pepper both sides
Place a slice of Canadian bacon on a greased baking sheet
Place a chicken breast on top of each slice of Canadian bacon & top with sour cream / cream of mushroom
mixture
Bake for 2 hours, covered with foil
Remove foil, cover with Shake & Bake / breadcrumbs
Bake for 30 minutes
(Optional but recommended): check temperature with a meat thermometer
