Honey/Lime Chicken

Description: A pretty simple but delicious way to prepare chicken on the stovetop or grill.
Prep time: 15 minutes plus 6 hours to marinate
Total time: 6 1/2 hours
Servings: 4 servings of 4 ounces each

Ingredients:
1 pound chicken breasts, 4 small-medium breasts
6 limes or juice equivalent, about 6 ounces or 12 Tablespoons
4-6 Tablespoons honey
Salt & pepper, to taste
Special tools/utensils needed:
1 gallon zip lock bag
Directions:
Pound chicken until thin (< ½ inch or so)
Season chicken with salt & pepper on both sides
Mix the chicken, honey & lime juice in a ziploc bag. There should be enough lime juice and honey to completely cover the chicken in the bag you are using. If you juice the limes instead of using lime juice, you can include a couple of pieces of the lime pulp & pith in the bag for a little extra flavor. Allow to marinate for at least 6 hours. If possible, mash the bag around periodically so all of the chicken is exposed to the marinade
When ready to cook, heat a grill pan or grill to medium-high heat.
Grill chicken until thoroughly cooked, about 5 minutes/side. A little char never hurts & makes the lime/honey flavors pop! Chicken is done with the internal spot temperature is 165F.
