Scalloped Pineapple

Description: This recipe is a hit wherever it shows up. It is very sweet and is almost more a dessert than a side dish. You can't go wrong however you serve it.

Ingredients:
1 20 Ounce can pineapple chunks in juice undrained
1 Stick butter, melted
2 Cups sugar
3 Eggs, beaten
4 Cups bread cubes (white bread with crusts trimmed and quartered)
Special tools/utensils needed: 9x12 baking dish
Directions:
Preheat oven to 350℉
Drain pineapple and reserve juice.
Melt butter and let cool.
Gently mix melted butter, drained pineapple, eggs, sugar and bread.
Put in a 9x12 casserole dish and pour a little of the pineapple juice over the top to moisten.
Bake for 40 minutes or until the top has browned.
