Peanut Brittle

Ingredients:
1.5 cups Sugar
1/2 cup Light Karo syrup
1/4 cup Water
2 cups Peanuts
1/4 teaspoons Salt
1.5 teaspoons Baking Soda
Special Tools/Utensils Needed:
Rimmed cookie sheet
Candy thermometer
Instructions:
Grease a rimmed cookie sheet, and set aside.
In a large saucepan, mix sugar, karo syrup, and water.
Attach your candy thermometer to the edge of the pot, and make sure it is submerged in the liquid, but not touching the bottom of the pot. Cook, stirring occasionally until temperature reaches 250* F.
Add the peanuts, and stir the mixture constantly until the candy thermometer temperature reaches 300* F.
Remove mixture from heat, and immediately stir in salt and baking soda. The mixture will foam and change texture.
Pour hot mixture onto the buttered cookie sheet, and use a knife or spatula to evenly spread the mixture. Let cool for at least 30 minutes.
Break and eat.
