Bleu Cheese Coleslaw

Description: A great side for a BBQ. Be sure to save some to make a Jack’s Cosmic Dog, bleu cheese coleslaw and sweet potato mustard on a hotdog!

Cooking time: No cooking, just chopping & stirring
Servings: 16 (1/2 cup serving) (makes 2 quarts)

Ingredients:
The Slaw:
1/2 Small head green cabbage, shredded; ~ 1 pound
4 Ounces crumbled bleu cheese, or to taste
1/3 Cup red onion, chopped
1/3 Cup carrot, shredded
The Dressing:
1 Cup mayonnaise
1/4 Cup half & half
1 Tablespoon olive oil
1/2 Cup sour cream
1/8 Cup balsamic vinegar
Salt, to taste
Cayenne pepper, to taste
Special tools/utensils needed:
2 large bowls
Directions:
In a large bowl, combine the cabbage, bleu cheese, onion and carrot.
In another large bowl, stir together the mayonnaise, half & half, olive oil, sour cream, balsamic vinegar, salt & pepper. Keep stirring until blended together thoroughly.
Pour dressing over the slaw ingredients and mix well until evenly distributed.
