Escort Chicken Casserole

Description: A classic chicken casserole. Times change; a box of Escort crackers NOW contains TWO cellophane packages of crackers. Each package has 4 smaller wrappers of crackers. For this recipe, use only 1 of the 2 cellophane packages.

Cooking time: 60 minutes

Ingredients:

6 chicken breasts, boneless & skinless

1 box Escort crackers, crushed

1 can water chestnuts, sliced

1 can cream of mushroom soup

1 can cream of chicken soup

8 ounce carton  carton sour cream

1 stick butter, sliced

Directions:

1. Preheat the oven to 350

2. In a large saucepan, boil the chicken breasts until tender. Cut into bite size pieces.

3. Place 1/2 of the crackers in the bottom of a baking dish.  

4. Combine the chicken with chestnuts, soups and sour cream in a mixing bowl and stir well.  

5. Pour the mixture in the cracker lined dish.

6. Put the remaining 1/2 of the crushed crackers on top and dot with sliced butter.

7. Bake for 25-30 minutes.
