Potato Soup

Description: This is something we all remember Gram making. A real favorite that somehow never made it to our Cookbook. The 3 sisters have tried to recreate this memory from nothing more than watching Gram make this numerous times…and enjoying! Bon Appétit!

Ingredients:
4 medium potatoes , cubed
1/4 cup medium onion, diced
4 celery leaves, torn
1 cup milk
1 Tablespoon butter
1/2 cup cheese, grated
Salt and pepper
Special tools/utensils needed:
Large saucepan
Directions:
In large saucepan boil potatoes, onions and celery leaves in the least amount of salted water possible. The water should just cover the potatoes. The amount of time will depend on the size of cubed potatoes, ~ 10 minutes. Don’t overcook.
Add milk, butter and cheese.
Season to taste with salt and pepper
You can play with ratios between water and milk depending on your preference. Save any boiled potato water you may decide to drain in case you need more liquid. That water is flavorful.
