Salmon Patties

Description: This is one of the recipes synonymous with Gram and a favorite of many family members.

Ingredients:
1 Small (7 Ounce) can sock eye salmon drained
1 Egg
2 Teaspoon lemon juice
1 Tablespoon parsley
1 Cup breadcrumbs or cracker crumbs (Or a combination of both depending on what you have on hand)
1/4 Teaspoon lemon pepper (or to taste)
Special tools/utensils needed: Cast iron skillet or oven safe skillet
Directions:
Discard bones and skin from canned salmon
Mix all ingredients together and make into patties.
If making fried potatoes as a side the potatoes take longer so refrigerate salmon patties until ready to cook.
Add enough grease to barely cover the bottom of the skillet and add patties. Cook over medium until brown (about 5 minutes).
Turn patties to the other side and turn to low heat until brown on this side (about 5 minutes).
