Grams' Chicken & Dumplings

Ingredients:
6 Chicken Tenders or 1 or 2 Chicken Breasts (approximately 1 pound)
1 Cup flour
1 Egg
3 or 4 Tablespoons water
Special tools/utensils needed: 3 qt dutch oven, rolling pin, wax paper
Directions:
In a separate pot place the chicken and add enough water to cover the chicken.
Bring water to a boil over high heat
Reduce to medium heat and boil chicken until tender, approximately 15-20 minutes.
Remove chicken from pot and keep chicken broth.
In a mixing bowl combine flour, egg & water, adding small amounts of flour or water if needed. Knead into a soft dough
Lightly flour a cutting board or waxed paper and coat your hands as well. Place dough onto floured surface. Roll out to 1/8” thickness like for pie dough.
Cut the rolled out dough with knife into long strips approx. 1" wide.
In the dutch oven, place chicken broth & add enough water to fill the dutch oven about 1/2 full. Add salt & pepper to taste.
Tear or cut chicken into bite size pieces and add to chicken broth
Bring chicken broth to boil on high heat
Drop in dumplings. Slightly pull dumpling strips apart while dropping into broth
Place lid on, reduce heat to medium low and simmer for 20 minutes.
