Whole Beef Tenderloin

Total time: 1 hour + 15 minutes per pound

Ingredients:
3-4 Pound Whole Beef Tenderloin
Red wine
Special tools/utensils needed:
Roasting pan with rack/ broiler pan or any pan without a rack. I have always used a rack.
Directions:
Let roast sit at room temperature for 1 hour prior to cooking
Preheat oven 350 degrees
Place in a pan with or without a rack. Place 1/2" of red wine (or water) in pan to prevent smoking.
Cook 15 minutes per pound. For medium rare remove from oven when inserted meat thermometer reads 120 - 125 degrees
Let stand for at least 10 minutes before cutting/serving
