Fried Rice

Description: This is a recipe Gram and Pap developed based on a popular Chinese restaurant in Tallahassee, Lucy Ho’s. This went with their rendition of her Cashew Chicken. We would also make egg rolls and hot mustard. It was a day in the kitchen chopping, grating, sauteing and lots and lots of conversation. The best kind of day and meal! Chopsticks required!

Total time: 15 minutes + time to cook rice if not using leftovers
Servings: 2- 4

Ingredients:
2 Tablespoons oil
1/4 Cup onion, diced
2 Cups cooked rice
2 Eggs, beaten
1 Tablespoon soy sauce
1/2 Teaspoon salt
For variety add 2 cups chopped cooked meat or chopped green pepper or peanuts.
Special tools/utensils needed:
Chopsticks
Directions:
Heat pan on medium heat, add oil and fry onions until brown, ~ 5 minutes.
Add rice and sauté, 2-3 minutes.
Add eggs, seasoned with soy sauce and salt.
Sauté until done, 2-3 minutes.
