Air-Fryer Chicken Parmesan

Description: The air fryer makes this classic delightfully tasty and crispy. As always, works great with a side of angel hair pasta and Marinara Sauce. There are a couple of delightful recipes for Marinara Sauce under Sauces.

Ingredients:
3/4 cup Panko bread crumbs
2 Tablespoons olive oil
1/4 cup grated Parmesan cheese
1 large egg
1 Tablespoon all purpose flour
3/4 teaspoon garlic powder
1/2 teaspoon dried oregano
salt & pepper, ⅛ teaspoon each for the coating & a little more for the chicken
2 (8 oz) boneless, skinless chicken breasts, trimmed
2 oz whole milk Mozzarella cheese, shredded (about 1/2 cup)
1/4 cup jarred Marinara sauce, warmed
2 Tablespoons chopped fresh basil

Air fryer
Directions:
Toss the panko with oil in a bowl until evenly coated. Microwave, stirring frequently, until light golden brown, about 1-3 minutes.
Transfer to a shallow dish, let cool slightly, then stir in the Parmesan.
In a second shallow bowl, whisk the egg, flour, garlic powder, oregano, salt and pepper together.
Pound the chicken to uniform thickness as needed. Pat dry with paper towels and season with salt & pepper.
Working with 1 breast at a time, dredge in the egg mixture, letting excess drip off, then coat with the panko mixture, pressing gently to adhere.
Lightly spray the base of the air-fryer basket with vegetable oil spray. Arrange the breasts in the prepared basket, spaced evenly apart, alternating ends. Place the basket in the air-fryer and set the temperature to 400F.
Cook until the chicken is crisp and registers an internal temp of 165 degrees, about 12-16 minutes, flipping and rotating breasts halfway through the cooking.
They will look scrumptious when they come out, but we’re not done yet! Sprinkle the chicken breasts with mozzarella. Return basket to the air-fryer and cook until the cheese is melted, about 1 more minute at 400F.
Transfer chicken to individual serving plates. Top each breast with 2 Tablespoons of warm marinara sauce and sprinkle with basil. Bon appetit.
