Strawberry Salad

Description: Consider this recipe more of an adjustable, go-with-the-flow starter than a strict script. The ingredients and amounts included make a stellar spinach strawberry salad for a crowd, but you can switch the greens and cheese up to suit your preference. Spinach and strawberries are classic together and an excellent choice. For a peppery twist, try using a blend of half arugula, half spinach. In addition to mild feta, goat cheese or a mild blue cheese like gorgonzola are excellent substitutes. Whether you choose feta, goat cheese, or blue cheese, buy a block of it (or in the case of goat cheese, one of those cute little logs), and crumble it yourself. It is creamier than the tubs of pre crumbled.

Ingredients:
10 Ounces salad greens
1 Quart fresh strawberries cut
3/4 Cup crumbled feta cheese
3/4 Cup pecans or walnuts
1/4 Cup raspberry vinaigrette
Special tools/utensils needed: large bowl
Directions:
Place salad greens in a bowl and put all other ingredients in except the vinaigrette
Just before serving add the vinaigrette and toss
To Make Ahead. Dress the salad as shortly before serving as you can. If you don’t plan to eat it all right away, dress only what you plan to eat right away.
To Store. Store leftover, undressed salad in the refrigerator for up to 4 days.
