Tortellini in Brodo

Description: A warm, hearty soup that hits the spot when its cold outside.

Ingredients:
2 Tablespoons olive oil
1 1/2 cup chopped onion
3/4 cup chopped celery
3/4 cup chopped carrots
2 tsp minced garlic
1 tsp Italian seasoning
1/8 tsp crushed red pepper flakes
8 cups chicken or vegetable stock
1 pack of tortellini (frozen or dried)
2 tbsp parsley
1/2 cup grated Parmesan cheese
Salt & pepper

Directions:
Heat olive oil in a large stock pot on medium high heat
Add onion, celery, carrots, and salt and pepper
Sauté until vegetables are soft about 5 minutes
Add garlic, red pepper flakes & Italian seasoning
Cook for another 2-3 minutes until garlic is fragrant then add stock
Bring to a boil then reduce heat to low and simmer for at least 20 minutes
Add the tortellini and cook for 5 minutes if using fresh pasta or 15 minutes if using frozen pasta
Serve soup and garnish with Parmesan cheese and parsley.
