Red Lentil Soup

Description: Tasty, healthy, vegetarian but can also be made vegan. The original recipe uses red lentils, but we use whatever kind of lentils we happen to have in the pantry. You have to adjust the simmer time accordingly, as some lentils cook very fast and then you'd have lentil paste instead of lentil soup :(

Ingredients:
3 Tablespoons olive oil
1 chopped onion
a garlic clove or 3, diced
1/2 bunch chopped kale, stems removed
2 carrots, diced
1 Teaspoon coriander, freshly ground
1 Teaspoon cumin, freshly ground
1 Hot chili or cayenne pepper
4 Cups chicken stock (or vegetable stock for the vegan version)
1 Cup red lentils (more for a thicker soup), washed.
Fresh lemon slices
Cilantro
Special tools/utensils needed:
Stock pot
Directions:
Sauté the onion and oil in the stock pot for 10 minutes.
Add spices, garlic and carrots and sauté another 3-5 minutes.
Add the chili, stock and lentils. Bring to a boil, reduce the heat and simmer 45-60 minutes.
Add the kale, salt & pepper to taste. Place in bowls and squeeze a bit of lemon juice into each bowl and top with some cilantro.
