Chicken Casserole

Ingredients:
2 pounds chicken breasts, boneless & skinless
1 can cream of chicken soup
1 cup sour cream
1 stick butter
4 Tablespoons poppy seeds
1.5 cups Ritz cracker crumbs
Directions:
Place chicken breasts in a medium saucepan. Cover with water and boil for 10 minutes. Remove the chicken breasts, but reserve the water/broth for use in making the rice.
Trim breasts and cut chicken into bite sized pieces.
Preheat the oven to 350
Combine the soup, sour cream, ½ stick butter broken into pieces and 2 Tablespoons of poppy seeds in a bowl and mix.
Alternate placing chicken pieces and mixture in a casserole dish. Top with Ritz crumbs, 2 Tablespoons of poppy seeds and dot with the remaining butter.
Bake for 45 minutes.
While the casserole is baking, use water/broth from step 1 to make the rice by cooking it according to the instructions on the bag or box.
Serve the casserole over a bed of rice.
