Swedish Meatballs

Description: Meatballs with a mushroom gravy served over rice or noodles. Add a green vegetable and it’s a great “company dinner”.

Ingredients:
1 1/2 Pounds ground beef
1 Teaspoon paprika
1 1/2 Teaspoon salt
1 1/2 Med onion (chopped very fine or grated)
1/3 Cup Minute rice
1/4 Teaspoon oregano
2 Tablespoons shortening or vegetable oil
1 (10.5 Ounce) Can cream of mushroom soup
1/2 Cup boiling water with 1 beef bouillon cube dissolved in it
1 Cup sour cream
1/3 Cup Parmesan cheese
Special tools/utensils needed: Two bowls, skillet, casserole dish
Directions:
In a large bowl, mix beef, paprika, salt, onion rice and oregano and shape into balls 1” in diameter.
Heat shortening or oil in a skillet and fry meatballs in skillet until exterior is browned. Remove balls and place on paper towels to remove residual oil.
In a bowl, combine the cream of mushroom soup, beef broth and sour cream. Mix until smooth.
Put balls into a casserole dish and pour sauce over meatballs, then top with parmesan cheese.
Bake at 300 degrees for 30-40 minutes.
