Description: Classic quiche from scratch

Ingredients:
9 inch pie pan with pastry
4 strips bacon
1 onion, chopped
1 cup Swiss cheese, cubed
1/4 cup parmesan cheese
4 eggs, slightly beaten
1 pint of Half & Half (2 cups)
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon white pepper
Directions:
Preheat the oven to 450 degrees.
Bake the pie pan with pastry for 5 minutes.
Cook the bacon and save 1 Tablespoon of the fat. Sauté the chopped onion in the bacon fat, until transparent in color. Drain on a paper towel.
Crumble the bacon and sprinkle the bacon, onion and cheeses (Swiss & Parmesan) over the pie shell.
Combine the eggs, Half&Half, nutmeg, salt and pepper and strain over the onion-cheese mixture.
Bake for 15 minutes @450 degrees, then reduce to 350 degrees for about 10 minutes longer. It is done when a knife inserted 1" from the edge comes out clean.
