Pan Fried Scallops

Description: Best scallop recipe. I use a cast iron pan on the grille outdoors, but you can use a skillet inside IF you have a good exhaust over the stove. Goes great with cheese grits, but then any seafood does, eh?

Total time: 16 minutes
Servings: 3 scallops for 2 people = 6 scallops

Ingredients:
6 Scallops (U 10 are amazing)
1 Tablespoon vegetable or olive oil
1 Tablespoon butter
Salt to taste
Freshly ground pepper to taste
Special tools/utensils needed: cast iron skillet & grille or nonstick skillet
Directions:
Wash the scallops under cold water; blot dry. Season both sides with salt & pepper.
Put the vegetable oil in the skillet and set heat to high, either grill or stovetop. When oil starts to smoke, place scallops in the skillet. Cook for 2 minutes, then remove scallops and set aside.
Add butter to the hot skillet. Once it melts (which is pretty quick), place the scallops back in the skillet, previously cooked side up.Cook for 60-90 seconds.
Check internal temperature ... scallops come off at 135 degrees F. Keep flipping scallops every 60-90 seconds until they hit the magic temperature ... cooking time depends on thickness of the scallop.
Let them rest for 5 minutes, then dig in!
