Turmeric Potato Salad

Ingredients:
4 Medium potatoes cubed
Dressing
3 Tablespoons of flour
3 Tablespoons of sugar
2 Tablespoons of vinegar
1/2-3/4 Cup of milk
Butter the size of a walnut
Turmeric to color yellow
Pickle relish to taste
2 Tablespoons of diced onion
Pimento to taste
1 Hard boiled egg, chopped

Directions:
Cook potatoes until tender, 10 - 15 minutes. Drain.
In a separate saucepan, cook the sauce. Mix the flour, sugar, vinegar, milk, butter, and turmeric. Cook until the sauce thickens well.
Add pickle relish, onion, pimento, and boiled egg to sauce. Salt to taste. Pour over cooked potatoes. Serve warm.
