Fried Potatoes

Ingredients:
4 Medium potatoes, peeled and thinly sliced
1/4 Teaspoon each, salt and pepper
1/4 Cup Flour
4 - 5 Tablespoons olive oil (alternatively, bacon grease or other vegetable oil)
Horseradish for serving

Peel potatoes, quarter lengthwise and then cut to 1/4” thickness. Place in a single layer on a dish towel or paper towels; press softly to remove as much moisture from the potatoes as possible. This is a very important step in order to achieve crispiness.
Place potatoes in a bowl and add salt and pepper. Add flour to coat potatoes. Mix well so all potatoes are covered.
Heat grease over medium high heat. Add potatoes and cover with a lid. Turn or stir often until brown. As the potatoes are cooking you may add additional salt and pepper depending on how you prefer. Reduce heat to low to finish, about 20 minutes.
Check and keep stirring until a fork or knife inserted meets no resistance. Do not overcook.
Horseradish for serving.
