Difficulty rating: 2
Ingredients:
Berries, 3 cups
1/4 cup lemon juice
1/2 teaspoon grated lemon peel
1/4 teaspoon ground cinnamon
1 1/2 cup sugar
1/2 teaspoon butter
Directions:
Slightly crush 3 cups of berries to make 2 cups.
Place the crushed berries & the other 5 ingredients in a 2 1/2 or 3 qt casserole dish and allow to stand until juices form, about 30 minutes.
Cook uncovered in a microwave on high power.
As soon as the mixture begins to boil (at about 6-8 minutes), stir every 2-3 minutes. Cook for a total time of 13 minutes.
When time is up, spoon a teaspoon full into a cup. Cool in the freezer for 5-7 minutes or the refrigerator for 15 minutes to test for consistency. If you want it thicker, heat for 2 more minutes.
