Potato Chip Cookies

Notes: Good! This recipe originally called for Oleo, and if you prefer and can find margarine, you should. We will proceed with butter.
Ingredients:
1 pound Butter
1 cup Sugar
1 cup Crushed potato chips
1 teaspoon Vanilla extract
3 cups All-purpose flour, sifted
1 cup Nuts, chopped
1 cup Confectioners sugar
Special Tools/Utensils Needed:
Hand mixer or stand mixer (optional)
Instructions:
Preheat oven to 350* F, and grease two cookie sheets.
In a medium mixing bowl, cream butter and sugar until smooth. Beat in chips and vanilla extract.
Add flour incrementally until fully incorporated. Mix in nuts evenly through the batter.
Drop 1 teaspoon sized dollops of cookie dough onto the cookie sheet, leaving 2” of space between each cookie.
Bake for 15 to 18 minutes.
When cookies are cool enough to be handled, roll in confectioners sugar. Cool on wire rack.
