Oatmeal Bread

Ingredients:
1 1/2 cups boiling Water
1 cup Quick cooking oats, uncooked
1/2 cup Butter or margarine, softened
1 cup Sugar
1 cup Brown sugar, packed
2 Eggs
1 teaspoon Vanilla
1 3/4 cups All-purpose flour
1 teaspoon Baking soda
1/2 teaspoon Salt
1 teaspoon ground Cinnamon
2/3 cup Raisins
Special tools/utensils needed:
Mixing bowl, hand mixer or stand mixer, 9x5x3" loaf pan
Directions:
Pour boiling water over oats; set aside.
Cream butter, gradually adding sugar, while beating well.
Add eggs, one at a time, beating well after each.
Add vanilla, beat well.
Combine flour, soda, salt & cinnamon (I coat the raisins in flour mixture).
Gradually add the flour mixture to the creamed mixture, beating well.
Stir in the oat mixture.
Preheat oven to 350 degrees
Spoon batter into a greased & floured 9x5x3" loaf pan.
Bake at 350 degrees for 1 hour or until it tests done. Let cool in the pan for 10 minutes.
(I do mine 10 minutes more-baking time.)
