Microwave Jam

Description: Great over ice cream!! Keeps several months in fridge.

Ingredients:
3 cups of Berries
1/4 cup Lemon juice
1/2 tsp. Lemon peel, grated
1/4 tsp. Ground cinnamon
1 1/2 cup Sugar
1/2 tsp. Butter
Special tools/utensils needed:
2 1/2 or 3 quart casserole dish, microwave, freezer
Directions:
Slightly crush 3 cups of berries to make 2 cups in a 2 1/2 or 3 quart casserole dish.
Add remaining ingredients.
Allow to stand until juices form, approximately 30 minutes.
Microwave uncovered for 15 minutes.
As soon as mixture begins to boil (at approximately 6-8 minutes), stir and continue cooking.
For the remainder of the Total time, stir every 2-3 minutes.
When 13 minutes is up, spoon a teaspoon full into a cup.
Cool in the freezer for 5-7 minutes or the refrigerator for 15 minutes to test for consistency.
If you want it thicker, heat remainder for 2 more minutes.
