Ann's Chinese Rice Salad

Description: This is a great do-ahead side dish, especially in the summer. Just add a nice grilled protein.

Ingredients:
Rice mixture:
1 Cup long grain rice, cook according to directions
6 Spring onions chopped
1/2 Cup red pepper chopped fine
1/2 Cup currants or raisins
1/2 Cup roasted cashew nuts
2 Tablespoons chopped fresh parsley
1 Small (8.75 ounces) can sweet corn drained
Soy Sauce Dressing
3 Ounces sunflower oil:
2 Tablespoons soy sauce
1 Tablespoon lemon juice
1/2 Clove garlic crushed
Salt and pepper to taste

Directions:
While rice is still warm, mix in all above ingredients. Pour dressing over rice mixture. When cool, store in the refrigerator overnight.
For Soy Sauce Dressing mix sunflower oil, soy sauce, lemon juice, garlic, salt and pepper.
