Chicken Curry

Ingredients:
1 bag frozen peas, uncooked
4 chicken breasts, boiled and cut into bite sized pieces
1 can Cream of Chicken soup
1 cup mayonnaise
2 Tablespoons curry powder (more if you like)
4 ounces cheddar cheese, shredded
1/2 stick butter
4 cups Cornflakes (interesting substitutes are breadcrumbs or crushed potato chips)
Directions:
Preheat the oven to 350F.
In a 9x13 inch baking pan, add the frozen peas until the bottom is fully lined. Spread chicken pieces over
peas.
In a bowl, mix the soup, mayonnaise, and curry. Spread over the chicken pieces then spread the shredded
cheese over the mixture.
Melt butter in a pan or microwave. Place the cornflakes in a large bowl. Pour the melted butter over the
cornflakes and stir so that all flakes are covered. Spread the buttered cornflakes over the cheese.
Bake uncovered for about 30 minutes or until the flakes are getting quite brown. Remove from the oven, let
rest for 5-10 minutes, scoop out & enjoy.
