Kaplan Marinara Sauce

Description: This is best made with homegrown tomatoes. It freezes very well...we often make a batch and bottle in Mason jars and freeze until we need it. Great in lasagna or any recipe that calls for marinara sauce.

Ingredients:
2 Large onions, chopped
3 cloves garlic, chopped
1 Green pepper, chopped
Olive oil
5 Pounds tomatoes (homegrown or farmers market)
8 Ounces tomato paste
2 Tablespoons oregano
2 Tablespoons basil
1 Tablespoon sugar
1/2 cup parmesan cheese
Add other veggies as desired, eg. mushrooms
Special tools/utensils needed:
Large pot, Mason jars if using to freeze
Directions:
Sauté onions, garlic and green pepper (plus any other veggies) in olive oil in large pot.
Add remaining ingredients, except parmesan, and cook uncovered 2 - 3 hours.
Add parmesan before serving.
