Beef Stew

Ingedients:
1 Package of stew beef (1-1/2 lb)
1 Medium onion chopped
4-5 Medium potatoes diced
3-4 Carrots sliced
1 4.5 or 6 oz Can of sliced mushrooms drained OR 8 ounces fresh mushrooms
2 Cans Campbell’s Golden Mushroom Soup
1/4-1/2 Cup sherry to taste
Salt and Pepper to taste
Special tools/utensils needed: 7 qt dutch oven
Directions:
In a dutch over place the stew meat, and onion. Sear the meat over high heat for about 3 minutes until browned on a few sides.
Add water to cover the beef and bring to a boil. salt and pepper to taste.
Reduce heat to low and cook the stew meat for 2-3 hours or until tender. As the water boils down leave just enough water to keep beef from burning. It may be necessary to add small amounts of water during this time.
Add the potatoes, carrots, mushrooms, soup, and sherry and cook until potatoes and carrots are tender about 15 minutes.
