Ice Cream

Description: The highlight of any summer family gathering at Gram and Pap’s was homemade ice cream. Normally they made just the vanilla favor but were also know to cut up fresh peaches and added them when they put the ice cream in the freezer. What makes this recipe unique from other homemade ice cream recipes is the Junket tablets. These are a weak form of rennet and is used to help set the ice cream. They are not as readily available in stores as they used to be but can be found on Amazon or at junketdesserts.com

Ingredients:
5 Large eggs, beat until they foam
1 cup Light brown sugar
1 3/4 cup White sugar
Pinch of salt
1 1/2 tablespoons Vanilla
8 cups Homogenized milk
1 pint Whipping cream
3 Junket tablets
1 tablespoon Warm water
3 cups Rock salt
8-12 Pounds ice
Special tools/utensils needed:
Ice cream maker
Directions:
In a bowl beat eggs until they foam.
Put beated eggs, brown sugar, white sugar, salt and vanilla in a blender and mix.
Warm the milk and whipping cream on low heat until it is lukewarm. Use the wrist method like you would for heating a baby bottle to check temperature. Gram and Pap always stressed not to get the milk too warm
While milk is warming dissolve 3 junket tablets in 1 tablespoon of warm water.
Mix the egg/sugar mixture, warm milk and cream and dissolved junket tablets together making sure dissolved junkets are added last.
Put the above mixture in the canister of the ice cream maker and twist the dasher 3-4 times. Do not fill past the fill line on the inside of the canister or the ice cream will overflow the canister.
Let it sit at room temperature and let the mixture cool. As it cools it will start to thicken like the consistency of buttermilk.
Once it has thickened a bit, Place ice cream maker in kitchen sink or another area that has good drainage. Place filled canister in center of bucket. Assemble motor over canister with dasher shaft inserted into the hole in the bottom of the motor. Turn motor counter clockwise to engage and lock the motor onto the bucket.
Plug power cord into outlet. The canister and cover will turn together. Allow ice cream to churn for 1 to 2 minutes before adding ice to bucket.
Distribute 1-2 inches of ice around the canister in the bucket. Uniformly sprinkle 1⁄2 cup rock salt over layer of ice. Continue adding layers of ice and salt until canister is covered.
