Grilled Chicken

Ingredients:
1/4 Cup + 1 Cup Lemon juice
1/4 Cup Dijon mustard
4 (6-8 Ounce) Boneless/skinless chicken breasts
Special tools/utensils needed:
Charcoal or gas grill
Meat thermometer
Basting brush
Directions:
Start the grill and pre-heat the grill to 375F.
While the grill is heating, place chicken breasts in a casserole dish and add 1 cup of lemon juice. Marinate the chicken in the lemon juice for at least 2 1/2 minutes on each side. Marinating time can be longer while the grill heats up.
While the chicken is marinating, combine in a bowl the remaining 1/4 cup lemon juice and the Dijon mustard to make a slightly runny paste.
Place chicken breasts on the pre-heated grill. Baste the top surface with lemon/mustard mixture. Cook for about 7 1/2 minutes. Flip breasts and baste with remaining lemon/mustard mixture. Cook for another 7 1/2 minutes. Chicken is done when the internal temperature reaches 165F.
Serve immediately.
