Ingredients:
1 whole, untrimmed “packer cut” brisket weighing 10-12 pounds
2 cups Apple juice
For optional rub
Kosher Salt
Pepper
For optional BBQ Sauce
Sweet Baby Rays BBQ Sauce
Open Pit BBQ Sauce
Special tools/utensils needed:
Rimmed baking sheet
Tin foil
Smoker
Instant Read Thermometer
Spray bottle for spritzing (optional)
Directions:
Trim excess fat, leaving a 1/8″ – 1/4″ fat cap. THIS video is helpful.
Apply a favorite rub. If using the optional rub, mix equal parts salt and pepper.
Place on smoker fat side up with smoker at 225-250°F.
After 4 hours cooking time, flip brisket to meat side up and rotate 90 degrees. Spritz with apple juice.
Keeping meat side up, spritz every additional two hours until the meat reaches a 170°F internal temperature.
Wrap in foil and cook in a 300°F cooker or oven to 205°F internal temperature.
If making BBQ sauce, start with Sweet Baby Ray's BBQ Sauce and add in Open Pit to taste. (We use about a 6:1 ratio)
Let the meat rest for at least 30 minutes before serving, or hold in an empty cooler for 2-4 hours.
Just before serving, separate the flat (thinner side) and point (thicker side) portions, and slice each across the grain, 1/4″ – 3/8″ thick.
