Shrimp and Asparagus

Ingredients:
4 English muffins
1 Pound fresh, young Asparagus spears trimmed and halved (Steamed)
4 Tablespoons Butter, divided
1/4 Teaspoon salt
32 Extra Large Shrimp (peeled and without tails)
4 Teaspoon lemon juice
1/4 Cup blue cheese
1 Cup Sour cream
Special tools/utensils needed: toaster, pot with steamer basket
Directions:
Split the english muffins and toast. Set aside.
Place 3 cups of water in the bottom half of a steamer pan set. Add 1 tablespoon butter and salt and bring to a boil.
Place asparagus spears in the top half of the steamer pan set. Steam until asparagus is tender, 5 to 10 minutes depending on thickness.
In a skillet, melt 3 tablespoons of butter over medium heat. Add shrimp and saute until opaque (about 2 minutes).
Place 3 halved asparagus spears (6 pieces) on top of toasted English muffin half. The pieces should be laid parallel to each other to cover the surface of the muffin.
Top asparagus & muffin with 4 shrimp; sprinkle each with lemon juice.
Blend cheese and sour cream & place a tablespoon of the mixture over shrimp/asparagus/muffin.
Broil 3-5 minutes.
Quarter each muffin assembly to make bite-size appetizers with 1 shrimp per quarter.
