Description: Aside from being pretty tasty and easy to assemble, these packets are great if you need to prepare meals ahead of time for yourself or someone else. They can be prepped in bulk, frozen and brought out as needed to throw in the oven.
Prep time: 5 minutes (more if you are making clarified butter from scratch)
Total time: 35 minutes
Servings: 4
Difficulty rating: 1
Ingredients:
Butter sauce:
1/4 Cup clarified butter, ghee, or other type of fat (we used duck fat)
2-3 Cloves of garlic (minced)
1/2 bouillon cube (whatever flavor)
Thyme
Crushed red chili pepper flakes
Salt & pepper
1 Pound mushrooms (cleaned & chopped)
1 Pound gnocchi
Fresh parsley (garnish)
Special tools/utensils needed:
Directions:
Preheat oven to 380 degrees F
Lay out foil packets (single sheet if using heavy-duty or double sheet if using normal foil). You can make as many as you want or cook in a single packet.
Combine clarified butter, garlic, bouillon, thyme, chili pepper, salt and pepper in a small bowl. Melt butter to make a sauce.
Place mushrooms and gnocchi in the middle of the foil and drizzle with about three quarters of the butter mixture.
If not using mushrooms, add a bit of water to the packet.
Seal the foil packets and bake for 15-20 minutes.
Remove from the oven, and open packets. Add the remaining butter mixture and stir.
Return packets to the oven and broil for 3-5 minutes.
