Black Bean & Sweet Potato Chili

Ingredients:
2 medium Sweet potatoes
2 tablespoons Light olive oil
1 cup Chopped onion
2 Garlic cloves
1 Medium red pepper diced
1 (32 ounce) Can of black beans (drained + rinsed)
1 (28 ounce) Can diced tomatoes
1 or 2 Fresh hot chilies minced or 1 (4 ounce can) chopped mild green chilies
2 teaspoons Cumin
1/2 teaspoon Dried oregano
Salt to taste

Directions:
Bake or microwave sweet potatoes on high until just firm (3-4 minutes per potato.) Peel and cut into 3/4" pieces. Set aside.
Heat oil in a large soup pot. Add onion and garlic and saute until golden. Add red pepper, black beans, tomatoes, chilies, cumin, oregano, and salt. Cook over medium heat for 15 minutes.
Add the sweet potatoes and cook for an additional 10-15 minutes until tender.
