Multi Bean Soup

Description: This was initially titled nine bean soup. There are multiple brands of multi bean soup mix available. Choose your favorite and a nice baguette to go with it. Note - If using Hurst’s brand beans discard the flavor packet that comes with it.

Total Time: 2 hours 15 minutes

Ingredients:
2 Cups of multi bean soup mix
8 Cups water
1 pound ham, diced
1 Large onion, chopped
1 Clove garlic, minced
1/2 - 3/4 Teaspoon salt (or to taste)
1 (16oz.) Can tomatoes & green chilies (Undrained)
Special tools/utensils needed: Dutch oven, colader
Directions:
Rinse 2 cups bean mix in a colander
Place the beans in a dutch oven and add water to cover 2 inches above beans
Soak overnight.
When ready to cook drain the water the beans are soaking in
Add 8 cups of water, ham, onion, garlic, and salt.
Cover and bring to a boil on high heat
Reduce heat and simmer on medium low heat for 1 1/2 hours or until beans are tender.
Add tomatoes and continue to simmer for 30 minutes, stirring occasionally.
