Peanut Butter Cookies

Ingredients:
1 cup Butter, softened
1 cup Sugar
1 cup Brown sugar, firmly packed
2 Eggs
2.5 cups All-purpose Flour
2 teaspoon Baking soda
1/4 teaspoon Salt
1 cup Creamy Peanut butter
1 teaspoon Vanilla extract
Special Tools/Utensils Needed:
Hand mixer or stand mixer (optional)
Instructions:
Preheat oven to 375* F.
In a medium mixing bowl, cream butter until pale. Gradually add sugars, beating well until golden. Add eggs, one at a time, beating well after each addition.
In a separate mixing bowl, sift flour, baking soda, and salt.
Add dry mixture to creamed mixture, alternating with peanut butter, beginning and ending with flour mixture.
Stir in vanilla extract.
Rest dough for 30 minutes in the refrigerator.
Shape dough into 1” balls, and place on ungreased cookie sheets about 2” apart. Press with a fork twice in perpendicular directions for the signature peanut butter cookie look.
Bake for 10 minutes, and remove to wire racks to cool.
