Greek Chicken Souvlaki

Description: Classic Greek dish to get you fueled up for a night of dancing the HORA. Skewers can be served as the meat portion of a meal or over a bed of rice with a medley of grilled Mediterranean vegetables.

Prep Time: 6 1/2 - 24 1/2 hours, includes time to marinate

Ingredients:
1 lb boneless, skinless chicken breasts cut into bite size pieces; about 24-32 pieces
2 tablespoons olive oil
1 tablespoon white wine vinegar
4 large minced garlic cloves
3 tablespoons Greek seasoning
3 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
Special tools/utensils needed:
1 gallon ziploc bag
4-6 skewers
grill or grilling pan
Directions:
Combine all the ingredients including the chicken in a ziplock bag and shake well to mix.
Place in the refrigerator and marinate overnight, but for a minimum of 6 hours if the band is warming up already. Remove the chicken and discard the leftover marinade.
Thread chicken onto skewers.
Grill outdoors or on a stovetop grill pan over medium high heat, turning occasionally. Cook until thoroughly done, about 15 minutes, with an internal spot temperature of 165F.
