Onion Pie

Description: An unexpected delight. Sweet and savory, surprisingly simple to prepare. Every spring in Anchorage a roadside vendor selling Vidalia onions would appear. Even though the ground was still snow covered, this was the collective sign that the season was changing. Onion Pie became a rite of spring in the north country.

Ingredients:
24 Saltines, crushed
1/4 Pound butter (3/4 stick)
3 - 4 medium vidalia onions, sliced into rings
2 Cups milk
5 Eggs
1 Teaspoon salt
1/2 - 1 Teaspoon pepper
2 Cups sharp cheddar cheese, grated
Special tools/utensils needed:
8” x 11” Baking Dish, greased
Directions:
Preheat the oven to 350 degrees F
Grease a baking dish with butter and place the crushed crackers in the bottom of the pan.
Melt the butter in a skillet. Saute sliced onion rings in butter until clear.
Place the sauted onions, along with butter from sauteing, on top of the crackers.
Mix together milk, eggs, salt and pepper.
Pour the egg mixture over the onions and saltines.
Sprinkle the grated cheese over the pie.
Bake for 35-minutes.
