Description: My usual at Wagamamas. Took a few tries to figure out the magic, but this recipe is a pretty accurate reflection of what we used to get in their SoHo restaurant in London back in the day.

Ingredients:
1 onion, thinly sliced
carrots, shredded, 2 handfuls
fresh bean sprouts, 2 handfuls
1 green pepper, thinly sliced
chicken breast, 8 ounces, cooked & diced
shrimp, 4 ounces, cooked & diced
2” fresh ginger, minced
4 Tablespoons soy sauce
1 teaspoon salt
4 teaspoons Mirin
4 teaspoons sesame seed oil
soba noodles, 400 grams (16 ounces)
pickled ginger, garnish
sesame seeds, garnish
spring onion, sliced for garnish
Special tools/utensils needed:
wok
colander
Directions:
Combine onion, carrots, sprouts, pepper, chicken, shrimp, ginger, soy sauce, salt, mirin, sesame oil and in a large bowl.
Cook the soba noodles per package directions. Drain.
In a hot wok (under a good vent), add the sesame seed oil, noodles and the mixture in step 1. Stir fry in the wok until things start to get semi crisp. You can stir fry the noodle/mixture combination in batches if your wok is not large enough to hold all the ingredients at once.
When cooking is done, split into 4 bowls. Garnish with pickled ginger, spring onions & a dash of sesame seeds. Serve with chopsticks. The best!
