Red Velvet Cake

Ingredients:
1 1/2 Cups sugar
1 1/2 Cups Wesson oil
2 Eggs
2 1/4 Cups self-rising flour
1 Cup milk
1/2 Teaspoon baking soda
1 Teaspoon vinegar
2 Teaspoon vanilla, divided
1 Ounces red food coloring
8 Ounces cream cheese
1 Stick margarine
1 Teaspoon vanilla
1 Box confectioners’ sugar
1 Can flaked coconut, divided
Special Tools/Equipment: hand mixer or stand mixer
Instructions:
Preheat oven to 350 ℉
Combine sugar and oil then eggs one at a time.
Next add flour, milk, baking soda, vinegar, 1 teaspoon vanilla, and red food coloring. Beat well using a hand mixer or stand mixer.
Pour batter into cake pans and bake for 25 minutes or less. Three layers will bake quicker than sheet cake. Allow to cool before icing.
For icing, mix cream cheese, margarine, remaining teaspoon of vanilla, confectioners’ sugar and 1/2 can flaked coconut.
Spread the icing onto the cooled cake and sprinkle the rest of flaked coconut on the cake.
