Peach Pudding

Description: When it was peach season you could always count on Gram having a peach pudding ready when you came to visit. Gram put a note in the cookbook that any kind of fruit can be used but her choice of fruit was typically peaches

Special tools/utensils needed:
9x12 baking dish
Ingredients:
1-quart Sliced peaches, peeled (about 5 medium peaches)
1 1/4 cup Sugar
1/4 teaspoon Salt + dash
1 Egg
2 tablespoons Melted butter
3/4 cup Whole milk
2 cups Flour
2 tsp. Baking powder
Pinch of salt
Directions:
Add the sliced peaches, 3/4 cup sugar and salt to a saucepan and stir to combine. Cook on medium heat for just a few minutes, until the sugar is dissolved and helped to bring out some juice from the peaches. Remove from heat and set aside.
Beat together egg, remaining sugar, milk, flour baking powder and pinch of salt.
Place sweetened peaches in bottom of a baking dish and cover with the batter.
Bake until delicate brown at 375° F for 25 to 30 minutes.
