Ingredients:
1/4 Cup olive oil
1/4 Pound diced salt pork
1/4 Pound diced ham
1 Diced onion
2 Cloves crushed garlic or garlic paste
1 Bay leaf
1-16oz Can white kidney beans
1 Boar's Head chorizo sausage diced
1-10oz Box chopped spinach
2 Cans diced potatoes
4 Cup chicken stock
1 Package of ham bouillon
Salt
Pepper
1/4 Teaspoon cumin
Crusty bread for serving
Special tools/utensils needed:
knife, cutting board, Dutch oven, ladle
Directions:
Over medium-high heat, saute olive oil, salt pork, and diced ham for five minutes.
Add onion, garlic, and bay leaf and saute for 5 minutes.
Add beans, diced chorizo, spinach, potatoes, chicken stock, ham bouillon, salt, pepper, and cumin. Bring to a boil. Simmer on medium heat for 20 - 25 minutes. Serve with crusty bread.
